Emjel® LC 15 is a modified starch designed for jellies and gums cooked at reduced temperatures. It provides reliable gelling, fast setting, and good processability at 105–110 °C, making it suitable for standard gelatin processes and atmospheric cooking systems. Ideal for plant-based jellies and gums, where it supports energy-efficient production while maintaining excellent texture. Emjel® LC 15 is also an excellent gelatin replacer in sugar paste fillings in for example extruded confectionery.
